Moroccan Lentil & Chickpea Soup

Ingredients
- 2 tbs Olive Oil
- 16 oz Lentils - Soak overnight
- 16 oz Chopped Cauliflower
- 8 oz Chopped Spinach
- 2 cans Petite Diced Tomatoes
- 1 can Chickpeas - Rinsed
- 3 Carrots - Half coins
- 1 Sweet Onion - Diced
- 3 Cloves Garlic - Minced
- 2 tbs Tomato Paste
- 6 cups Vegetable broth
- Cumin
- Turmeric
- Paprika
- Cinnamon
- Salt
- Pepper
- Dash Ginger
- 1/4 cup Lemon Juice
- Harissa spice - Very hot, use sparringly

Low 8-10 hours
If lentils are still very firm around the 8 hour mark turn up to high for 2-3 hours.
