Ingredients

  • 2 tbsp Olive Oil
  • 1 Onion - Chopped
  • 1 Green Bell Pepper - Chopped
  • 3 Cloves Garlic - Minced
  • 2 tbsp All Purpose Flour
  • 2 Cups Vegetable Broth
  • 1 Can Diced Tomatoes
  • 1 Can Kidney Beans - Rinsed & Drained
  • 8 oz Mushrooms - Sliced
  • 1 Zucchini - Half coins
  • 1 Cup Sliced Okra
  • 8 oz Chopped Soysage - Plain or Andouille
  • 2 Stalks Celery - Coins, optional
  • 2 Carrots - Coins, optional
  • 2 Tbsp Worcestershire Sauce - Vegetarian if available
  • Salt & Pepper
  • Garlic Powder
  • Paprika
  • Onion Powder
  • Cayenne
  • Oregano
  • Thyme
  • Red Pepper Flakes
  • 1 Bay Leaf

Instructions

  1. 1 Tbsp oil. Soften onion, bell pepper, celery, carrot, garlic in dutch oven, 8-10 mins. Move to slow cooker

  2. 1 tbsp oil in dutch oven, stir in flour until golden brown. About 4 mins. Pour in the broth and bring to a boil. Transfer to slow cooker.

  3. Low 6-8 hours. Remove bay leaf before serving

  4. Serve over rice.
