Moroccan Lentil & Chickpea Soup

Ingredients

  • 2 tbs Olive Oil
  • 16 oz Lentils - Soak overnight
  • 16 oz Chopped Cauliflower
  • 8 oz Chopped Spinach
  • 2 cans Petite Diced Tomatoes
  • 1 can Chickpeas - Rinsed
  • 3 Carrots - Half coins
  • 1 Sweet Onion - Diced
  • 3 Cloves Garlic - Minced
  • 2 tbs Tomato Paste
  • 6 cups Vegetable broth
  • Cumin
  • Turmeric
  • Paprika
  • Cinnamon
  • Salt
  • Pepper
  • Dash Ginger
  • 1/4 cup Lemon Juice
  • Harissa spice - Very hot, use sparringly

Instructions

  1. Low 8-10 hours

    If lentils are still very firm around the 8 hour mark turn up to high for 2-3 hours.
